I avoid cooking salmon since it never seems to come out good.
This recipe is super easy & delish! Even my daughter who claims to hate salmon eats it!
Preheat oven to 450 degrees
Place large piece of foil on cookie sheet
Place salmon on foil
Sprinkle salt, pepper & garlic
Place lemon slices on top of salmon
Cover salmon with foil
Bake for about 20-25 min till flakey
Cauliflower Rice (buy prepackaged cauliflower "rice" )
Heat wok on high
Add coconut oil to coat wok
Sprinkle with salt, pepper, cilantro
Stir fry till brown
Serve the cauliflower rice with the salmon & you have a balanced meal of healthy fat, protein & carbs!
